These Zesty Tuna Patties are not only fun to make but they are also a fantastic lunch on-the-go or dinner option for the whole family!

Zesty Tuna Patties

Makes: 6-8

Ingredients:

  • 2 cans tinned tuna in salt water, drained
  • 1 tbsp olive oil
  • ¼ cup oat flour
  • ¼ cup almond flour
  • ½ red onion, chopped
  • ½ lemon, juiced
  • 1 tbsp lemon zest
  • 1 garlic clove, minced
  • 1 tbsp Dijon mustard
  • 1 tsp chilli flakes (Optional)
  • 1 Large egg, beaten
  • Salt and pepper to taste

Method:                                                                                  

  1. Drain the tuna and then mix all the ingredients together (except the egg) until well combined.
  2. Add the egg and mix again.
  3. Roll the mixture into balls and then, using the edge of your palm, flatten them. The mixture should make 6-8 patties, depending on the size.
  4. Refrigerate for about an hour
  5. Heat a splash of olive oil or coconut oil in a frying pan over medium heat.
  6. Carefully place the patties into the pan.
  7. Cook until golden brown on either side (roughly 5mins per side).
  8. YUM!

TIP: You can substitute the oat flour for 1/4 cup of almond flour. You could also play around with brown rice or quinoa flour.
