Veggie Rice Paper Rolls

Hello Gorgeous Girls!

I have been obsessing over veggie spring rolls for the last couple of weeks – not only do they look SUPER yummy, they are colorful and pretty too!

SO… I decided to make a Healthy Girl batch at home. My husband and I thoroughly enjoyed these little rolls as a tasty and nutritious snack – it’s a FAB way to get an extra kick of veggies into your daily diet!

Ingredients:

Veggie Rice Paper Rolls

  • 6 rice paper sheets
  • Julienne cut carrot, cucumber and beetroot
  • Finely chopped lettuce of choice
  • Fresh mint
  • Fresh coriander

Peanut Butter Dipping Sauce:

  • 2 tablespoons of natural peanut butter (smooth)
  • 3 tablespoons of warm water
  • The juice of 1/2 a lime
  • 1 teaspoon of honey plus a small squeeze more
  • 1 teaspoon of tamari

Method:

  1. Begin with your peanut butter sauce. Place your peanut butter and warm water into a bowl and mix until smooth. Add in the rest of the sauce ingredients and stir until well combined. Place into the fridge while you make the veggie spring rolls.
  2. Prepare your carrots, cucumber, beetroot and lettuce. Set aside.
  3. Place a rice paper sheet into water, for about 15 – 20 seconds, until it has softened. (I like to use a large serving plate that has just enough depth to fill with water)
  4. Remove the rice paper sheet from the water and place onto a clean tea towel, removing the excess water.
  5. Lie the rice paper sheet down onto a flat surface, place you fillings into the centre of the sheet (do not over fill otherwise rolling will be difficult).
  6. Fold over the bottom and the sides of the sheet and then roll upwards to form a neat roll shape.
  7. Repeat this until all 6 rice paper rolls are complete.
  8. Serve as a starter or a snack with the peanut butter dipping sauce.
  9. ENJOY!
