This Sweet Potato Chip, Chickpea and Veggie salad is perfect for vegans, meatless Monday or even if you are just in a veggie kinda mood. I always feel so satisfied and grounded after eating this yummy meal!

Sweet Potato Chip, Chickpea and Veggie Salad

Serves: 4 – 6

Sweet Potato Chips

  • 1kg sweet potato cut into wedges or chips
  • 2 Tbsp olive or coconut oil
  • Seasoning

Sautéed Veggies

  • 400g blend of kale, cauliflower rice and broccoli rice
  • 2 red onions, cut in wedges
  • 1 Tbsp olive or coconut oil
  • 1 tsp garlic
  • Seasoning

Crunchy Chickpeas

  • 2 cans chickpeas, organic is preferable
  • 2 Tbsp olive oil
  • Seasoning

Tahini Dressing

  • 4 Tbsp tahini
  • 1/2 cup fresh lemon juice
  • 1/4 cup warm water
  • Seasoning

Method

  1. Preheat oven to 180 Degrees Celsius
  2. Place all sweet potato chip ingredients into a baking tray, mix and place into the oven. Cook for 40 – 50 minutes or until done to your liking.
  3. While the chips are cooking heat some olive oil in a frying pan over a medium heat. Add the garlic and red onions, sauté until translucent.
  4. Add the cauliflower rice, broccoli rice and kale into the frying pan and continue to sauté until cooked. Set aside.
  5. Mix all the tahini sauce ingredients together in a bowl. Set aside.
  6. About 15 minutes before the sweet potato is ready, add the chickpeas into the baking tray and roast until crunchy.
  7. Plate up and ENJOY!
