Smokey Sweet Potato Wedges and Gaucamole

Hello Gorgeous!

Sweet potato wedges + guacamole = a match made in foodie heaven! Who feels the same?!

I simply can’t get enough of this delicious (and nutritious) little meal lately… It’s perfect as a quick and easy lunch or as a no-fuss Sunday night dinner! PLUS it is also a great healthy snack option for your guests when entertaining at home. I hope that you’ll like it just as much as I do!

Ingredients

Serves 2

Smokey Sweet Potato Wedges:

  • 2 large sweet potatoes, cut into wedges (one sweet potato per person)
  • A glug of olive oil
  • A generous sprinkle of smoked paprika (normal paprika will also work)
  • Salt and pepper to taste

Guacamole:

  • 1/2 avocado
  • Juice of 1/2 lemon
  • 1 big handful of rosa/cherry tomatoes. chopped
  • Feta cheese, crumbed, to taste
  • 1 heaped tbsp coriander, chopped
  • 1 tsp olive oil
  • Garlic powder, optional
  • Salt and pepper to taste

Method

  1. Preheat the oven to 180 degrees Celsius.
  2. Wash sweet potatoes and then cut into wedges.
  3. Place wedges into a mixing bowl, add olive oil, smoked paprika, salt and pepper. Mix well and make sure all the wedges are coated evenly.
  4. Line a roasting pan with some baking paper.
  5. Place the wedges onto the baking paper in a single layer (this helps to get the wedges nice and crispy).
  6. Put the tray in the oven and roast for 30 – 35 minutes, until crispy.
  7. While the wedges are roasting, place all the guacamole ingredients into a bowl and mash/mix together well.
  8. Remove wedges from the oven and allow them to cool slightly.
  9. Serve wedges with guacamole drip.
  10. It’s as easy as that… ENJOY!
