This Roasted Butternut Salad is without a doubt one of my FAVOURITE salads ever! Colourful, nourishing, flavorsome and bursting with texture. Give it a try and let me know what you think Beautiful. 🙂

Roasted Butternut Salad with Vibrant Dressing

Serves: 4

Ingredients:

  • 500g butternut, cut into cubes
  • 200g mushrooms, sliced
  • 1 ½ red onion, cut into wedges
  • 3 tbsp olive oil
  • Sprig of fresh rosemary
  • Salt and pepper to taste
  • 150g greens of your choice (spinach, rocket, watercress etc)
  • 1 x 400g tinned lentils, drained
  • *Optional: ADD feta or goats cheese

Green salad dressing:

  • 1 cup flat leaf parsley
  • 3 tbsp Almond butter/tahini
  • 2 tbsp olive oil
  • 2 tbsp water
  • 1 tbsp Dijon mustard
  • 1 ½ green chilli (depending on hotness)
  • ¼ avocado
  • Salt and pepper to taste

Method:

  1. Preheat the oven to 180°C
  2. Spread out the butternut and drizzle over the olive oil, rosemary and seasoning.
  3. Allow to bake for 20 mins.
  4. After 20 mins, turn the temperature up to 200°C.
  5. Add the mushrooms and onions to the butternut and roast for a further 20 mins.
  6. To make the sauce, blend all the ingredients together until smooth. If the sauce is too thick, try adding another 2 tbsp water. Continue until desired consistency.
  7. When the veggies are done, remove and allow to cool for 5 mins.
  8. Toss the veggies, salad mix and lentils together in a bowl
  9. Serve with the sauce drizzled over or on the side.

TIP: You can substitute the mushrooms with ANY other veggie of your choice!
