Healthy Girl Chicken Pad Thai

Talk about eating the rainbow – you cannot help but feel like a little ray of sunshine after eating this fresh and veggie loaded dish!

Healthy Girl Chicken Pad Thai

Ingredients:

  • 2 Tbsp sesame oil
  • 2 large chicken breasts, cut into strips (you can use any other protein that you prefer – you can also opt to go meatless)
  • 2 tsp minced or chopped garlic
  • 1 cup shredded carrots
  • 1 cup thinly sliced cabbage (red and or green)
  • 1 large bell pepper, thinly sliced
  • 3 large zucchini, spiralized into noodles
  • Cashew and macadamia nuts, toasted

Sauce:

  • 1/2 cup organic peanut butter (or any other nut butter that you like)
  • 1/4 cup maple syrup
  • 1/3 cup tamari
  • 2 Tbsp sesame oil
  • 2 Tbsp Rice vinegar/Apple cider vinegar
  • 2 tsp fresh ginger, minced
  • 1 tsp chilli flakes
  • Squeeze of lime (optional)
  • Salt to taste

Method:

  1. Heat the sesame oil, garlic, and chicken strips in a large pan/wok over medium heat. Add the carrots, cabbage, and pepper slices. Cook for about 5 minutes until the vegetables are a little tender.
  2. Once tender, add the zucchini noodles. Cook and stir for about 3 minutes until the zucchini is a little softer. Turn off the stove and remove from heat. Set aside.
  3. Combine all of the peanut sauce ingredients in a small saucepan over low heat. Whisk constantly until the peanut butter has melted and everything is combined.
  4. Once the sauce is heated through, pour over chicken and vegetables. Toss everything around until combined. Place on a serving dish and top with some fresh coriander and nuts of your choice.
