Happiness is a freshly baked batch of these Gluten-free Apple & Cinnamon Muffins!

Your whole house will smell absolutely DELECTABLE once you pop these into the oven… Like Tash my intern said – if she could bottle the smell up and turn it into body lotion she would!

Enjoy these yummy treats as a snack or even a breakfast on the go – also perfect for kiddies lunch boxes.

Gluten-free Apple & Cinnamon Muffins 

Makes: 10-12 Muffins

Ingredients:

  • 1 cup Almond Flour
  • 1 cup Almond Butter
  • 1 large Apple, grated
  • 3 eggs
  • ½ cup Coconut sugar, melted (in a pot, over medium heat, with a splash of water)/Organic Maple Syrup/Raw Honey
  • 1/3 cup Desiccated coconut
  • 1/3 cup Virgin Coconut Oil, melted
  • 2 tsp Cinnamon
  • ½ tsp Bicarbonate of soda
  • ½ tsp Baking Powder
  • ¼ tsp Himalayan salt
  • Topping Suggestion: I topped it with Woolworths Vanilla and Coconut Granola and flaked almonds. You could top it with raw oats, pecan nuts, apple slices etc.

Method:

  1. Preheat the oven to 180°C and spray a muffin tray
  2. Mix all the ingredients together
  3. Spoon the mixture into the tray
  4. Sprinkle over your choice of topping
  5. Bake for 15 mins.
  6. Remove and enjoy every last crumb.
