Christmas Gingerbread Cookies

These DELISH Gingerbread Cookies are not only easy to make but they are guaranteed to make your whole house smell like Christmas while they are baking. Make these for yourself to munch on at home this festive season or even better, make a batch, wrap them up and give them as gifts to your family and friends this Christmas!

Christmas Gingerbread Cookies

Makes 8 big cookies

Ingredients

  • 1 1/4 cup almond flour
  • 1/3 cup coconut flour
  • 1/4 cup coconut blossom sugar
  • 1 large egg, free range and organic if possible
  • 3 tbsp coconut oil
  • 2-3 tbsp maple syrup, depending on your sweetness level preference
  • 1 1.2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp baking powder, gluten-free if possible
  • 1/3 tsp sea salt

For dusting: In a small bowl, set aside 3 tbsp of coconut blossom sugar mixed with 1 tsp of cinnamon

Method

  1. Place all the dry ingredients into a mixing bowl and whisk together until well combined.
  2. In a separate mixing bowl add all your wet ingredients (egg, maple syrup and coconut oil). Whisk until smooth.
  3. Add the dry ingredients to the wet and mix together with a spoon. Once the dough is formed and all ingredients are combined, place the mixing bowl into the fridge for 30 – 45 minutes.
  4. Prepare a baking tray with some baking paper and preheat the oven to 160 degrees Celsius.
  5. Remove the gingerbread cookie mixture out of the fridge, measure out one tablespoon of cookie dough at a time, roll it into a ball, then dust the ball in your coconut sugar and cinnamon mixture.
  6. Place the ball on the baking tray and repeat this until you have 24 balls on your baking tray.
  7. Using a fork or a small flat surface gently press down and flatten your gingerbread ball into a mini cookie shape.
  8. Place the baking tray in the oven and bake the cookies for 15 – 20 minutes. Cooking time may vary depending on your oven.
  9. Keep an eye on the cookies, once they are all golden brown you can remove them from the oven.
  10. Allow the cookies to cool for a few minutes in the tray before transferring to a cooling rack.
  11. TIP: These would be delicious with a little drizzle of dark chocolate over the top!
