Hello Beauties!

I am SO excited to share one of my favorite recipe books EVER! Meet… Brookdale’s Heavenly & Healthy Flavours !!! I am dubbing this recipe book as an ESSENTIAL addition to any Healthy Girl’s kitchen.

Whether you are looking for a burst of beautiful new flavours or searching for some culinary inspiration, this recipe book has your name written all over it. Heavenly & Healthy Flavours is a magnificent compilation of wholesome, unprocessed, home-made foods that are both nutritious and delicious! These are principals that I firmly believe we should be following when it comes to the food that we choose to put into our bodies.

There truly is something for everyone – containing a diverse collection of over 100 recipes – including sugar free; grain free; dairy free; meat free; low fat; healthy fat; animal protein; and vegan options!

Each & every single recipe that I have tried out is an absolute hit and I can’t wait to keep on trying more! Picking JUST one to share with you all was a difficult task to say the least but I have chosen to go with the Roast Butternut & Barley salad… This dish is delicious on SO many different levels! Brookdale’s Heavenly & Healthy Roast Butternut & Barley Salad

(Serves 4 – 6)

DRESSING

  • 1/3 cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 – 2 tsp raw honey
  • 2 tsp dijon mustard
  • 2 tbsp fresh origanum, chopped
  • herb salt and ground black pepper

SALAD INGREDIENTS

  • 2 cups butternut, peeled and cubed
  • 1 medium red onion, cut into wedges
  • 2 garlic cloves, crushed
  • 2 tbsp olive oil
  • few sprigs of thyme
  • herb salt and ground black pepper
  • 1 cup pearl barley, cooked (I have personally used couscous and quinoa instead and both are great substitutes to play around with!)
  • 80g baby salad leaves
  • 100g blue cheese / crumbled danish feta
  • 2 tbsp pecan nuts, toasted
  • 2 tbsp pumpkin seeds, toasted
  • Sprouts / micro greens

METHOD

  • Pre-heat oven to 180 degrees.
  • Toss butternut, onion and garlic with olive oil, add sprigs of thyme and seasoning.
  • Roast for 20 – 25 minutes until the vegetables are soft and still have a touch of colour
  • Toss roasted veggies into the cooked pearl barley (I personally have substituted the pearl barley with couscous and quinoa – both where just as awesome)
  • Mix dressing ingredients. Scatter salad leaves on a platter and top with barley mix.
  • Dress with cheese and drizzle dressing. Top with nuts, seeds and sprouts just before serving.
